We loved it–almost had a souffle texture. Also loved not having the last minute hassle that usually accompanies breakfast. I cut the recipe exactly in half, using 4 1/2 eggs. My husband did the cutting while I did the mixing. It was fun & delicious, a welcome addition to our breakfast/brunch repertoire.

Fabulous. Fast and easy to make, versatile to switch veggies (peppers and green onions interchange easily) as does the type of cheese.
They’re portable, taste great hot or cold and
no frittata pan to scrub out.

really tasty!. i made them as a breakfast / snack prep, but halved the recipe (used 4 eggs, not 4.5) and added some frozen defrosted spinach, along with sundried tomatoes and olives rather than the feta, also i had some gram flour to use so i used 4 teaspoons of that rather than AP. Topped with pesto or avocado, and had with some fruit, so delicious!!
