I made this, with my own spin. I added thyme, rosemary, and a teensy bit of basil, rather than just thyme. I used an extra 3/4 cup stock, with extra 1/4 cup of a very sweet white wine, which was added after cooking was finished, and reduced into a creamy sauce which was helped by the rice starch. I also included a blend of pecorino romano, asiago, and a bit of sharp cheddar, Kerrygold Dubliner, specifically. I also added some chicken for protein, but going forward I would probably use pancetta or guanciale.

I made this as written with two small additions. One was that some of my mushrooms were dried morels which I reconstituted over about 15 minutes with 2 cups boiling water (the rest were fresh creminis). I then chopped and sauteed them with the fresh mushrooms. I mixed that mushroom water in with the broth (same liquid amount overall). The dried mushrooms always add a lot of complexity and extra mushroominess for those looking for that sort of thing 🙂

I also stirred in some frozen green peas at the end.

Perfect!

I haven’t tried it with black rice, but I highly recommend arborio rice because it’s a very creamy type of rice.
