50 Thanksgiving Side Dishes: Easy Mashed Potatoes

Serves 4 to 6

Ingredients

Instructions

  • Use the back of a chef’s knife or a small masher to mash the roasted garlic into a paste before incorporating into the mashed potatoes. Set aside.
  • Place the potatoes and 1 teaspoon of salt in a large pot and fill with enough water to cover the potatoes by 1 inch. Bring to a boil and cook until fork tender, about 20 minutes. Drain, reserving 1 cup of the cooking liquid.
  • Use a ricer or a potato masher to mash the potatoes into a large bowl. Use a rubber spatula to fold in the roasted garlic, olive oil, ½ cup of the reserved cooking liquid, 1 teaspoon salt, and several pinches of pepper. Continue folding until creamy, adding up to ½ cup more cooking liquid if desired for creamier potatoes. Serve hot with butter, rosemary, and chives, if desired.

    I tried the Roasted Carrots side dish along the side of burgers and WOW!! The flavor in the dish was phenomenal. I never have Dukkah before, but this nut and seed mixture in combination with the yogurt spread was delicious. And of course, can’t forget about the amazing seasonings on the carrots! Will be making again and highly recommend!

    The delicata squash, kale, apple and sage salad was amazing! The dressing brought the salad to life and married the sweetness of the squash with the earthiness of the kale.     I like these recipes!!! Something new to try out!

    My Mom taught me how to make cranberry salad, omg so good! It’s cranberries, crushed; a can of crushed pineapple; a small can of mandarin oranges, drained; finely chopped pecans; diced celery and an apple diced too. A packet of jello mixed in to bring it all together. Let it set in fridge to set up. Best prepared the day before.

    Another side dish worth mentioning: succotash! Just a frozen bag of lima beans and frozen corn with a little bit of water according to package instructions with a pat or two of butter. Let them cook according to instructions. Talk about yum!
